Stringer 2017 Cabernet Sauvignon Napa Valley
The 2017 Napa Valley Cabernet Sauvignon is blend of three Cabernet Vineyards that we sourced fruit from in 2017. 35% of the blend is Cabernet from the Pelissa Vineyard in Oakville, 42% is Cabernet from Stagecoach and 16% is Cabernet from the Williamson Vineyards in Oak Noll. The remaining 7% is Petite Sirah from Calistoga.
The hand-picked fruit was destemmed, hand sorted and moved to a combination of a closed top stainless tanks and small new 60 gallon French oak barrels for fermentation. After a 5-day cold soak the musts were inoculated. The ferments were punched down 2-3 times per day and allowed to reach a maximum temperature of 92°F. The wine stayed on its skins for an average of 21 days before being pressed at dryness.
The nose is complex and layered with notes of boysenberry, cocoa and toasted cedar. This wine is deep and brooding with hints of chocolate covered cherries, blackberries and currants. The fine-grain tannins coupled with masculine structure make this wine attractive in its youth but will only become more refined as it matures.
